Melbourne is in safe hands with Takashi-san front of house. This place isn't some oldskool Tokyo transplant, but a brave local concept done with style and is poised to become a regular haunt for many.

Sancerre by the glass, red duck curry, sticky black rice pudding. If sharing the whole snapper, ask for it to be served before the curry so you can eat the more subtle first without curry going cold
One of the best restaurants in Australia. Also has a great bar and is open for lunch - well worth the detour as they say in the Michelin Guide

Hard to get into, but worth a wait. Downstairs has a great bar too - Gogo's. It's Asian infusion food, which I hate as a term, but love as a Chin Chin meal.
