First Course

Oysters Rockefeller

Blue point oysters baked in shell topped with mixture of breadcrumb, fresh spinach, Parmesan, shallot and garlic and flavored with Pernod and served with mignonette sauce -OR-

Butternut Squash Soup

Butternut squash roasted with onion, honey and brown sugar then pureed and simmered with cream, vegetable stock, a hint of cayenne, cinnamon and nutmeg, served with creme fraiche and snipped chive

Second Course

Grilled Pear and Arugula Salad

A composed salad of grilled pear, arugula, artichoke, scallion, spicy pecans, Gorgonzola cheese and red wine vinaigrette -OR-

Apple, Avocado and Bacon Salad

Mixed greens tossed with granny smith apple, avocado, crispy bacon and tomato with lime vinaigrette

Fresh chopped lobster combined with cream, shallot, Parmesan, cognac, tarragon and lemon, returned to the shell and baked -OR-

Cassata Rum Cake

Four layers of yellow cake brushed with rum simple syrup, filled with sweet ricotta, pistachio and chocolate, frosted with fresh whipped cream -OR-

Profiterole

Light French pastry filled with vanilla bean ice cream, drizzled with chocolate ganache and topped with fresh whipped cream
